There are a few options out there for Keto tortilla’s, but this is a great way to ditch them all together and simply enjoy the delicious ingredients. I based this off the recipe found here I omitted the onion, but you could add it if you have the carb space. I also bought precut stir fry beef, but you could get thin sliced sirloin or meat of your choice. These were crazy good!!!
16oz Stir Fry Beef
50g each of bell pepper (red, yellow, orange)
1/2 (50-60g) tomato
1-2 teaspoons lemon juice
Fajita or Taco Seasoning
Cut the peppers into strips
Sauté peppers until cooked or charred and set aside
Season the meat as appropriate. I used Keto taco seasoning I make myself that has zero sugar
Grab a one pepper of each color and roll up and secure with a toothpick
Cool for about 1-2 mins in each side or longer if you prefer your meat well done
Chop up the tomato and avocado mix. Add lemon juice and any salt and pepper to taste. Super simple. Feel free to use onions or your own recipe.
This makes a decent amount. Macros are for half the batch. I removed the toothpicks before starving them and used 4 tablespoons of sour cream because I love the stuff. It’s also a good way to get some fat into the meal. Your macros will vary based on how much you use.
