Zuppa Toscana Soup Recipe:

Ingredients:
- 1 pound Italian sausage (mild or spicy, according to your preference)
- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 3 medium potatoes, peeled and thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (adjust according to your spice tolerance)
- 2 cups chopped kale or Swiss chard
- 1 cup heavy cream or half-and-half

- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Remove the sausage from the pot and set aside.
- In the same pot, add the chopped bacon and cook until crispy. Remove the bacon from the pot and set aside.
- Drain most of the bacon fat, leaving about 1 tablespoon in the pot. Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent.
- Pour in the chicken broth and water, and bring the mixture to a boil.
- Add the sliced potatoes, salt, black pepper, dried oregano, and crushed red pepper flakes to the pot. Reduce the heat to medium-low and simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the cooked Italian sausage, chopped kale or Swiss chard, and bacon. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Reduce the heat to low and stir in the heavy cream or half-and-half. Heat the soup for a few more minutes, until it’s warmed through but not boiling.
- Serve hot and enjoy!
