  • 2 cups chopped kale or Swiss chard
  • 1 cup heavy cream or half-and-half

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Remove the sausage from the pot and set aside.
  2. In the same pot, add the chopped bacon and cook until crispy. Remove the bacon from the pot and set aside.
  3. Drain most of the bacon fat, leaving about 1 tablespoon in the pot. Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent.
  4. Pour in the chicken broth and water, and bring the mixture to a boil.
  5. Add the sliced potatoes, salt, black pepper, dried oregano, and crushed red pepper flakes to the pot. Reduce the heat to medium-low and simmer for about 15 minutes, or until the potatoes are tender.
  6. Stir in the cooked Italian sausage, chopped kale or Swiss chard, and bacon. Cook for an additional 5 minutes, allowing the flavors to meld together.
  7. Reduce the heat to low and stir in the heavy cream or half-and-half. Heat the soup for a few more minutes, until it’s warmed through but not boiling.
  8. Serve hot and enjoy!
