Creamy, cheesy, and wonderfully comforting, this Low-Carb Spinach Ricotta Bake combines tender spinach with creamy ricotta, Parmesan, eggs, and mozzarella. It bakes into a beautifully golden casserole with a soft, savory center.

🧾 Ingredients

Servings: 4–6
Prep time: 10 minutes
Bake time: 25–30 minutes
Oven: 375°F (190°C)

  • 2 cups fresh spinach, roughly chopped
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Pinch of nutmeg, optional
  • 1 tsp olive oil, for cooking/greasing

👩‍🍳 How to Make It

1. Preheat the oven
Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with olive oil or cooking spray.

2. Prepare the spinach
Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the spinach and cook for about 1–2 minutes, just until wilted. Let it cool slightly, then squeeze out as much excess water as possible. This step is important—the spinach can otherwise make the bake watery.

3. Make the creamy mixture
In a large bowl, combine the ricotta, Parmesan, eggs, garlic, Italian seasoning, salt, pepper, and nutmeg. Stir until smooth and well combined.

4. Add the spinach
Fold the drained spinach into the ricotta mixture until evenly distributed.

5. Fill the baking dish
Pour the mixture into the prepared dish and spread it into an even layer.

6. Add the cheesy topping
Sprinkle the shredded mozzarella evenly over the top.

7. Bake
Bake for 25–30 minutes, until the center is set and the top is golden and bubbling. If you want a deeper golden crust, broil for about 1 minute, watching carefully.

8. Rest and serve
Remove from the oven and allow it to rest for 5–10 minutes before slicing. This helps the creamy filling firm up so you get neat, satisfying pieces.

✨ Easy Variations

  • Extra protein: Add 2–3 additional egg whites or some cooked shredded chicken.
  • More garlic: Add an extra clove of fresh garlic.
  • Spicy: Add red pepper flakes.
  • Mediterranean: Add fresh basil, dill, or a few chopped olives.
  • Extra cheesy: Increase the mozzarella topping to ¾ cup.
