🧀 Keto Crispy Cheesy Bread

This ridiculously easy 3-ingredient cheesy bread gets golden and crisp around the edges while staying wonderfully cheesy in the middle. It can also double as a simple low-carb pizza crust. The original version uses mozzarella, Parmesan, egg, garlic powder, and Italian seasoning, baked at 350°F and finished briefly under the broiler.

🛒 Ingredients

Makes: 4–6 servings

  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • ½ tsp garlic powder, or to taste
  • ½ tsp Italian seasoning, or to taste
  • Nonstick cooking spray
  • Parchment paper

Optional:

  • ¼ tsp black pepper
  • Pinch of red pepper flakes
  • 1 tbsp chopped fresh parsley
  • Extra Parmesan for sprinkling

👩‍🍳 Instructions

1. Preheat the oven
Preheat your oven to 350°F (175°C).

2. Prepare the baking sheet
Line a cookie sheet with parchment paper and lightly spray the parchment with nonstick cooking spray.

3. Make the cheesy mixture
Add the mozzarella, Parmesan, and egg to a mixing bowl. Stir thoroughly until the egg coats the cheese and everything comes together into a sticky mixture.

4. Add the seasoning
Mix in the garlic powder and Italian seasoning. Add black pepper or red pepper flakes if desired.

5. Spread it out
Transfer the mixture onto the parchment paper. Using the back of a spoon or spatula, press and spread it into a thin, even rectangle. Aim for roughly ¼-inch thickness.

6. Bake
Bake for approximately 12–15 minutes, watching for the edges to become golden brown and the cheese to bubble.

7. Broil for extra crispiness
Turn the oven to broil and broil for about 1 minute. Watch it carefully because the cheese can brown very quickly.

8. Cool and slice
Remove from the oven and let it sit for 2–3 minutes. Cut into squares, strips, or breadsticks using a pizza cutter or sharp knife.

🍕 Make It a Keto Pizza

After baking the cheesy crust, add:

  • Low-carb pizza sauce
  • Mozzarella
  • Pepperoni
  • Italian seasoning
  • Your favorite low-carb toppings

Return it to the oven until the toppings are hot and the cheese is melted.

💡 Tips

  • Spread it evenly: A thinner layer gives you crispier edges.
  • Don’t skip the parchment: It makes removing the baked cheese much easier.
  • Freshly grated Parmesan can give you a better texture.
  • Keep a close eye on the broiler—the final minute makes a big difference.
  • Serve immediately for the crispiest texture.
