Ingredients

For the brownies

  • ½ cup (56 g) almond flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • ⅓ cup (65–70 g) granulated erythritol or monk fruit sweetener
  • ¼ cup (56 g) unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp baking powder
  • Pinch of salt
  • ¼ cup sugar-free chocolate chips

For the keto caramel topping

  • 2 tbsp unsalted butter
  • 2 tbsp heavy whipping cream
  • 2 tbsp powdered keto sweetener
  • ½ tsp vanilla extract
  • Pinch of salt

For the turtle topping

  • ⅓ cup chopped pecans, lightly toasted
  • 2 tbsp sugar-free chocolate chips, melted
  • Optional: a little extra flaky sea salt

Instructions

1. Prepare the oven

Preheat the oven to 350°F (175°C). Line an 8 × 8-inch baking pan with parchment paper or lightly grease a smaller pan for thicker brownies.

2. Make the brownie batter

Whisk together the melted butter, eggs, sweetener, and vanilla. Add almond flour, cocoa powder, baking powder, and salt. Mix until smooth, then fold in the sugar-free chocolate chips.

3. Bake the brownies

Spread the batter evenly in the prepared pan. Bake for 12–18 minutes, until the edges are set and the center is just cooked. Avoid overbaking to keep the brownies fudgy.

4. Prepare the caramel

Melt the butter in a small saucepan over low heat. Stir in the heavy cream, powdered sweetener, vanilla, and salt. Simmer gently for 2–3 minutes, stirring continuously, until slightly thickened. Let cool briefly.

5. Add the turtle topping

Drizzle the caramel over the brownies, sprinkle with toasted pecans, and finish with melted sugar-free chocolate. Add a tiny pinch of sea salt if desired.

6. Slice and serve

Let the brownies cool for a few minutes so the topping can settle. Slice into 9 squares and enjoy warm or chilled.

Tips for the best keto turtle brownies

  • Keep them fudgy: Remove the brownies when the center is just set; almond flour brownies firm up as they cool.
  • Choose keto-friendly toppings: Use sugar-free chocolate chips and a sweetener that fits your low-carb plan.
  • Make the caramel thicker: Simmer it a little longer, watching carefully to prevent scorching.
  • Boost the protein: Serve with plain Greek yogurt or a little high-protein, unsweetened yogurt on the side.

Estimated nutrition

Per brownie, based on 9 servings:

  • Calories: 170–210
  • Protein: 3–5 g
  • Total carbs: 7–10 g
  • Fiber: 2–3 g
  • Net carbs: approximately 4–7 g
