Homemade Keto Dark Chocolate Bites

If you’ve never made your own chocolate before, this recipe is so simple and satisfying! With unsweetened cocoa powder, coconut oil, coffee, and your favorite keto sweetener, you can make rich chocolate bites right in your kitchen. Coconut-oil chocolate recipes are typically set by chilling because coconut oil becomes firm when cold.

📝 Ingredients

Makes about 15–20 small pieces, depending on your molds

  • 1 cup unsweetened cocoa powder
  • 1 cup coconut oil, melted
  • 1 tbsp instant coffee or very finely ground coffee
  • 2–4 tbsp stevia or keto sweetener, to taste
  • ½ tsp vanilla extract, optional
  • Small pinch of salt, optional

👩‍🍳 Instructions

1. Prepare a double boiler
Fill a saucepan with a couple of inches of water and bring it to a gentle simmer. Place a heat-safe glass or metal bowl over the saucepan, making sure the bottom of the bowl doesn’t touch the water.

2. Melt the coconut oil
Add the coconut oil to the bowl and let it melt gently. Keep the heat low rather than allowing the oil to become very hot. Gentle heating is commonly recommended for coconut-oil chocolate.

3. Add the cocoa powder
Sift the cocoa powder to remove lumps. Gradually add it to the melted coconut oil while whisking continuously.

Keep stirring until you have a completely smooth, glossy chocolate mixture.

4. Add the coffee
Stir in the instant coffee or finely ground coffee. The coffee gives the chocolate a deeper, richer flavor without making it taste strongly like coffee.

5. Sweeten it
Add 2 tablespoons of your chosen sweetener first. Stir well and taste carefully. Add more sweetener gradually until you reach your preferred sweetness.

If using stevia, remember that different products have very different strengths, so it’s better to add it gradually.

6. Add optional flavorings
Stir in vanilla and a tiny pinch of salt. The salt helps bring out the chocolate flavor.

7. Fill the molds
Remove the bowl from the heat. Carefully spoon the chocolate mixture into silicone chocolate molds, candy molds, or even clean ice-cube trays.

Tap the mold gently against the counter to remove any air bubbles.

8. Freeze
Place the molds in the freezer for approximately 15–20 minutes, or until the chocolate is completely firm. Similar homemade coconut-oil chocolates are chilled or frozen until set.

9. Unmold and enjoy!
Pop the chocolate pieces out of the molds and enjoy immediately.

🍓 Delicious Add-Ins

Before chilling, try adding:

  • Chopped almonds or walnuts
  • Unsweetened shredded coconut
  • Peanut butter swirls
  • A pinch of sea salt
  • Chopped pecans
  • Unsweetened coconut flakes
  • Sugar-free chocolate chips
  • A little orange zest
  • Cinnamon or chili powder

❄️ Storage

Because coconut oil softens at room temperature, keep these chocolates in an airtight container in the refrigerator or freezer.

💡 For Firmer, More “Chocolate-Bar” Texture

This version will be softer and more melt-in-your-mouth than commercial tempered chocolate because coconut oil is being used as the fat. If you want a more traditional chocolate snap, cocoa butter is a better choice than coconut oil.
