Greek Chicken Gyros with Cucumber Tzatziki

Juicy, lemon-herb marinated chicken thighs grilled until beautifully charred, tucked into warm pita with crisp vegetables and plenty of cool, creamy cucumber tzatziki. Chicken thighs work especially well here because they stay juicy during high-heat cooking.

🧾 Ingredients

Servings: 4–6 gyros
Prep: 20 minutes
Marinating: 30 minutes–4 hours
Cooking: 15–20 minutes

For the Chicken

  • 1½ lb boneless, skinless chicken thighs
  • ¼ cup olive oil
  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp lemon zest, optional

For the Cucumber Tzatziki

  • 1 cup plain Greek yogurt
  • ½ large cucumber, finely grated
  • 1–2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • ¼ tsp salt
  • Black pepper, to taste

For Serving

  • 4–6 warm pita breads
  • 1–2 tomatoes, diced or sliced
  • ½ red onion, thinly sliced
  • ½ cucumber, sliced
  • Fresh parsley or dill
  • Crumbled feta, optional
  • Lemon wedges

👩‍🍳 Instructions

1. Prepare the chicken marinade

In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, paprika, cumin, thyme, salt, pepper, and lemon zest.

Add the chicken thighs and toss thoroughly until every piece is coated.

Cover and refrigerate for at least 30 minutes. If you have more time, 2–4 hours gives the chicken even more flavor. Avoid excessively long lemon-heavy marinades because the texture can become less pleasant.

2. Make the tzatziki

Grate the cucumber and place it in a clean kitchen towel or paper towels.

Squeeze out as much liquid as possible. This is the secret to thick, creamy tzatziki rather than a watery sauce.

Add the cucumber to a bowl with Greek yogurt, garlic, lemon juice, olive oil, dill, salt, and pepper.

Mix well, cover, and refrigerate until ready to serve.

3. Cook the chicken

Heat a grill, grill pan, or heavy skillet over medium-high heat.

Remove the chicken from the marinade, allowing excess marinade to drip off.

Cook the thighs for approximately 5–7 minutes per side, depending on thickness, until deeply browned and cooked through. The chicken should reach 165°F (74°C) internally.

4. Rest and slice

Transfer the cooked chicken to a cutting board and let it rest for about 5 minutes.

Slice the chicken into thin strips. Don’t skip the resting step—it helps keep the meat juicy.

5. Warm the pita

Warm the pita breads in a dry skillet for about 20–30 seconds per side, or microwave briefly until soft and flexible.

6. Assemble the gyros

Place warm pita on a plate and add:

  1. Grilled chicken strips
  2. Diced tomatoes
  3. Sliced cucumber
  4. Red onion
  5. A generous spoonful of cucumber tzatziki
  6. Fresh dill or parsley
  7. Optional crumbled feta

Finish with a squeeze of fresh lemon.

Fold the pita around the filling and serve immediately. 🌿🍋

⭐ Tips for Amazing Gyros

  • Don’t skip squeezing the cucumber for the tzatziki.
  • Marinate the chicken ahead of time for deeper flavor.
  • Cook the chicken in batches if necessary so the pan stays hot and the chicken browns instead of steaming.
  • For extra-charred edges, allow the chicken to cook undisturbed for a few minutes before turning.
  • Warm the pita right before assembling so it stays soft and flexible.

🥗 Low-Carb Option

For a lower-carb version, skip the traditional pita and serve the chicken and tzatziki in lettuce cups, a low-carb wrap, or over a Greek salad. Keep an eye on the yogurt and vegetable portions if you’re following a strict keto plan.
