For the 3-Ingredient Pecan Crust

  • 1Β½ cups pecans, finely ground
  • 4 tbsp unsalted butter, melted
  • 2 tbsp powdered erythritol or another keto-friendly powdered sweetener

For the Lemon Filling

  • 8 oz cream cheese, softened
  • Β½ cup powdered keto-friendly sweetener
  • Β½ cup heavy whipping cream
  • ΒΌ cup fresh lemon juice
  • 1 tbsp finely grated lemon zest
  • 1 tsp vanilla extract
  • Β½ tsp unflavored gelatin, optional for a firmer pie
  • 1 tbsp cold water, if using gelatin

Optional Garnish

  • Thin lemon slices
  • Whipped cream
  • A little grated lemon zest
  • Chopped pecans

1. Prepare the oven

Preheat your oven to 350Β°F (175Β°C).

Lightly grease a 9-inch pie dish with butter or line the bottom with parchment paper if desired.

2. Make the pecan crust

Place the pecans in a food processor and pulse until finely ground.

Be careful not to process them for too long or they can turn into pecan butter.

Transfer the ground pecans to a bowl and add the melted butter, powdered sweetener, and optional pinch of salt.

Mix until the pecans are evenly coated and the mixture resembles moist, crumbly sand.

3. Press the crust into the pie dish

Pour the mixture into your pie dish.

Using the back of a spoon or the bottom of a measuring cup, firmly press the mixture across the bottom and slightly up the sides.

Try to make the crust an even thickness so it bakes uniformly.

4. Bake the crust

Bake at 350Β°F for 10–12 minutes, until the crust smells toasted and the edges are lightly golden.

8. Whip the cream

In a separate bowl, whip the heavy cream until it forms soft-to-medium peaks.

Don’t over-whip it.

9. Optional: Make the filling firmer

If you want a firmer pie that slices very cleanly, sprinkle the gelatin over 1 tablespoon cold water and let it sit for about 5 minutes.

Warm it gently until dissolved, then allow it to cool slightly.

Slowly mix it into the lemon filling.

10. Fill the crust

Spoon the lemon filling into the completely cooled pecan crust.

Use a spatula to smooth the top.

11. Chill

Cover the pie and refrigerate for at least 4 hours, preferably overnight.

The filling will become firmer and the lemon flavor will develop as it chills.

12. Garnish and serve

Before serving, decorate with:

  • Fresh lemon zest
