Someone shared this idea yesterday, and I knew I had to try it. The result? It tastes like something straight from a bakery! The outside gets golden and crispy while the inside is creamy, sweet, and fruity. So easy and satisfying!
🛒 Ingredients — 1 Blintz
- 1 low-carb tortilla or wrap
- 1 tbsp softened cream cheese
- 1 tbsp sugar-free strawberry preserves
- 1 tsp avocado oil or coconut oil, for frying
- Optional: powdered erythritol/monk fruit sweetener, for topping
- Optional: a few fresh strawberries for serving
👩🍳 Instructions
- Soften the cream cheese
Let the cream cheese sit at room temperature for a few minutes so it spreads easily. - Assemble the blintz
Lay the low-carb tortilla flat. Spread 1 tablespoon of cream cheese evenly over one half, leaving a small border around the edge.
Spread 1 tablespoon of sugar-free strawberry preserves over the cream cheese.
- Fold
Fold the tortilla in half over the filling and gently press the edges together. Avoid overfilling so the filling doesn’t escape while cooking. - Heat the pan
Place a nonstick skillet over medium-low heat and add about 1 teaspoon avocado oil or coconut oil. - Fry until golden
Carefully place the filled tortilla into the skillet. Cook for about 2–3 minutes per side, pressing gently with a spatula, until both sides are golden brown and crisp.
Keep the heat moderate—the tortilla can brown quickly.
- Serve
Transfer to a plate and let it cool for a minute or two. Dust lightly with powdered monk fruit or erythritol if desired.
