  • 1 tablespoon butter
  • โ…“ cup diced onion
  • โ…“ cup diced green bell pepper
  • 3 garlic cloves, minced
  • 2 cups cooked shredded chicken
  • 1 can Rotel tomatoes, undrained
  • 1 (12-ounce) bag steamed riced cauliflower
  • 2 tablespoons homemade taco seasoning or 1 taco seasoning packet
  • ยพ cup chicken broth
  • 1ยฝ cups shredded cheddar cheese
  • ยฝ cup shredded Monterey Jack cheese

  1. Prepare the vegetables:
    Heat a large skillet over medium heat and melt the butter. Add the diced onion and green bell pepper. Sautรฉ for about 2โ€“3 minutes, until they begin to soften.

    Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  3. Add the chicken:
    Add the cooked shredded chicken to the skillet and stir to combine with the vegetables.

  5. Add tomatoes and cauliflower:
    Stir in the Rotel tomatoes and steamed cauliflower rice.
  6. Add chicken broth:
    Pour in the chicken broth and stir everything together. Allow the mixture to simmer for about 2โ€“3 minutes, stirring occasionally, until heated through and the flavors come together.
  7. Make it cheesy:
    Reduce the heat to low. Add the cheddar and Monterey Jack cheese. Stir until the cheese is completely melted and the skillet becomes creamy and cheesy.

    Taste and adjust the seasoning if needed. Serve immediately while hot and bubbly.
