This colorful salad combines sweet, earthy beetroot, creamy feta, hearty chickpeas, and a bright lemon-garlic dressing. It’s quick to prepare, satisfying enough for a light lunch, and makes a beautiful side dish for grilled chicken or fish.

For the Salad

  • 1 can (15 oz/425 g) chickpeas, drained and rinsed
  • 2 medium cooked beets (beetroot), peeled and diced
  • Β½ cup crumbled feta cheese
  • Β½ small red onion, thinly sliced
  • Β½ cup cucumber, diced
  • ΒΌ cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped (optional)
  • ΒΌ cup walnuts or pumpkin seeds (optional)
  • Salt and freshly ground black pepper, to taste

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1–2 cloves garlic, finely minced
  • 1 tsp Dijon mustard
  • Β½ tsp honey or keto-friendly sweetener (optional)
  • ΒΌ tsp salt
  • ΒΌ tsp black pepper

1. Prepare the chickpeas

Drain the chickpeas thoroughly and rinse them under cool running water.

Pat them dry with a clean towel. Removing excess moisture helps the dressing cling to the chickpeas instead of becoming watery.

2. Prepare the beetroot

If using pre-cooked beets, peel and cut them into approximately Β½-inch cubes.

If cooking your own beets, roast them at 400Β°F (200Β°C) until fork-tender, usually 45–60 minutes depending on their size. Cool completely, peel, and dice.

3. Prepare the vegetables

Thinly slice the red onion and dice the cucumber.

Chop the parsley and mint.

4. Make the vinaigrette

In a small bowl or jar, combine:

  • Olive oil
  • Lemon juice
  • Lemon zest
  • Minced garlic
  • Dijon mustard
  • Optional honey or keto sweetener
  • Salt
  • Black pepper

Whisk vigorously until the dressing is emulsified and slightly creamy.

Taste and adjust the lemon, salt, or pepper to your preference.

5. Combine the salad

Add the chickpeas, diced beetroot, cucumber, red onion, parsley, and mint to a large bowl.

Pour about two-thirds of the vinaigrette over the ingredients.

Gently toss so the beetroot doesn’t get completely mashed and the ingredients remain distinct.

6. Add the feta

Add the crumbled feta and gently fold it through the salad.

Avoid vigorous mixing because you want the feta to remain in little creamy pieces.

7. Add crunch

Sprinkle walnuts or pumpkin seeds over the top if using.

Drizzle with the remaining vinaigrette.

8. Rest before serving

For the best flavor, let the salad sit for 10–15 minutes before serving. This gives the chickpeas and vegetables time to absorb the lemon-garlic dressing.
