Chicken & Vegetable Fried Rice

A flavorful, protein-rich twist on classic fried rice! Tender chicken, fluffy rice, colorful vegetables, scrambled egg, and fragrant garlic come together in one easy skillet meal. 🍚✨

πŸ›’ Ingredients

  • 2 cups cooked white rice, completely chilled
  • 2 chicken breasts, diced into small pieces
  • 2 cloves garlic, finely minced
  • 1 cup mixed vegetables β€” peas, carrots, and corn
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cooking oil
  • Β½ teaspoon black pepper
  • Salt, to taste
  • 2–3 green onions, chopped, for garnish
  • Β½ teaspoon grated ginger, optional
  • Β½ teaspoon red pepper flakes, optional

  1. Prepare the rice
    For the best fried rice, use cold leftover rice. If using freshly cooked rice, spread it on a tray and allow it to cool completely before cooking.
  2. Cook the chicken
    Heat the cooking oil in a large skillet or wok over medium-high heat. Add the diced chicken and season lightly with black pepper.

Cook for 5–7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink inside.

  1. Add garlic
    Add the minced garlic and optional ginger. Stir-fry for about 30–60 seconds, just until fragrant.
  2. Scramble the eggs
    Push the chicken mixture to one side of the skillet. Pour the beaten eggs into the empty side.

Let them set for a few seconds, then gently scramble until cooked. Break the eggs into small pieces.

  1. Add the vegetables
    Add the peas, carrots, and corn. Stir-fry for 2–3 minutes, until heated through and slightly tender.
  2. Add the rice
    Add the chilled rice. Use your spatula to break apart any clumps, then toss everything together.

Stir-fry for approximately 3–5 minutes, allowing the rice to become hot and slightly toasted.

  1. Season
    Pour the soy sauce around the sides of the hot pan, followed by the sesame oil. Toss thoroughly so the sauce coats the rice evenly.

Taste and add a little salt only if needed, since soy sauce is already salty.

  1. Finish & serve
    Turn off the heat and sprinkle with chopped green onions. Add red pepper flakes if you like a little heat.
