A rich, creamy, cheesy low-carb pasta loaded with tender shredded chicken, spinach, juicy tomatoes, and Parmesan. An easy one-pot slow-cooker meal that’s perfect for a filling dinner. ❀️

Servings: 6–8

  • 8 oz (225 g) keto/low-carb pasta
  • 2–3 large boneless, skinless chicken breasts
  • 1 cup (240 ml) chicken broth
  • 1 block (8 oz / 225 g) cream cheese, cut into cubes
  • 1 cup grated Parmesan cheese
  • 1Β½ cups grape tomatoes, halved
  • 2 cups fresh spinach
  • 2 tsp minced garlic
  • 1–2 tsp salt, to taste
  • 1–2 tsp black pepper
  • 1–2 tsp garlic powder
  • 1–2 tsp onion powder
  • 1–2 tsp red pepper flakes, to taste

  1. Prepare the slow cooker: Lightly grease the inside of your slow cooker if desired.
  2. Add the chicken: Place the chicken breasts in the bottom of the slow cooker.
  3. Add the creamy ingredients: Pour in the chicken broth and add the cubed cream cheese.
  4. Add the vegetables: Add the halved grape tomatoes and minced garlic.
  5. Season: Sprinkle in the salt, black pepper, garlic powder, onion powder, and red pepper flakes. Adjust the red pepper to your preferred level of heat.
  6. Slow-cook: Cover and cook on HIGH for about 3–4 hours, or until the chicken is fully cooked and easy to shred. Chicken should reach 165Β°F/74Β°C internally.
  7. Shred the chicken: Remove the cooked chicken and shred it with two forks. Return it to the slow cooker and stir everything together until the cream cheese creates a smooth, creamy sauce.
  8. Add Parmesan: Stir in the Parmesan cheese until melted and incorporated into the sauce.
  9. Add spinach: Add the fresh spinach and stir. Cover for a few minutes until the spinach wilts.
  10. Add the keto pasta: Cook the low-carb pasta according to its package directions if required. Drain it well, then add it to the slow cooker.
  11. Combine: Gently toss everything together until the pasta is completely coated in the creamy chicken-Parmesan sauce.
  12. Taste and finish: Taste and adjust the salt, pepper, garlic, or red pepper flakes as desired.

For a quicker meal, use pre-cooked grilled chicken. Add the chopped/shredded chicken, tomatoes, broth, cream cheese, garlic, and seasonings to the slow cooker and cook until hot and creamy. Then stir in the Parmesan, spinach, and prepared pasta.
