4-Ingredient Protein Balls
These easy no-bake protein balls are chewy, satisfying, and packed with protein and healthy fats. Instead of rolled oats and maple syrup, this low-carb version uses almond flour and a sugar-free sweetener, making it a great grab-and-go snack for busy mornings, post-workout cravings, or when you need something sweet without the added sugar.
Ingredients
1 ½ cups fine almond flour
½ cup vanilla protein powder, preferably low-carb
¾ cup natural peanut butter or almond butter, no added sugar
⅓ cup powdered allulose or powdered erythritol
1 tsp vanilla extract
2–4 tbsp unsweetened almond milk, as needed
Optional: 2 tbsp sugar-free chocolate chips or unsweetened shredded coconut
Instructions
Add the almond flour and low-carb protein powder to a large mixing bowl and stir until evenly combined. Add the peanut butter, powdered sweetener, and vanilla extract, then mix until a thick dough forms.
If the mixture seems too dry or crumbly, add unsweetened almond milk, 1 tablespoon at a time, until the mixture holds together easily. Fold in sugar-free chocolate chips or shredded coconut if desired.
Using a tablespoon or small cookie scoop, portion the mixture and roll it between your hands to form approximately 18–20 bite-sized protein balls. Place them on a plate or lined tray and refrigerate for at least 30 minutes, or until firm.
Store in an airtight container in the refrigerator for up to 1 week. These keto protein balls are perfect for meal prep and make an easy high-protein, low-carb snack whenever cravings hit.
Tip: For the best texture, use a creamy natural nut butter. If your peanut butter is very thick, warm it slightly before mixing.
