🥦 Ingredients
- 1 lb (450 g) boneless, skinless chicken breast, cut into bite-size pieces
- 1 medium zucchini, sliced
- 1 small bell pepper, sliced
- 1 cup broccoli florets
- 3 tbsp olive oil, divided
- 1 tbsp butter
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 1 tbsp chopped fresh parsley, optional
- Lemon wedges, for serving, optional
👩🍳 Instructions
- Prepare the chicken: Pat the chicken dry and cut it into evenly sized pieces. Season with Italian seasoning, paprika, salt, and black pepper.
- Cook the chicken: Heat 1–2 tbsp olive oil and the butter in a large skillet over medium-high heat. Add the chicken and cook for about 5–7 minutes, stirring occasionally, until browned and cooked through. Transfer the chicken to a plate.
- Sauté the vegetables: Add the remaining olive oil to the same skillet. Add broccoli and bell pepper first and cook for 2–3 minutes. Add zucchini and minced garlic and continue cooking for another 3–5 minutes, until the vegetables are tender-crisp.
- Combine: Return the cooked chicken to the skillet. Toss everything together and cook for another 1–2 minutes so the flavors combine.
- Finish: Taste and adjust salt and pepper. Sprinkle with fresh parsley and serve with lemon wedges if desired.
💪 Protein & Keto Notes
This is naturally low-carb and keto-friendly because it uses chicken and non-starchy vegetables without rice, pasta, or sugary sauces. Chicken breast provides most of the protein. For an even higher-protein meal, use 1¼–1½ lb chicken breast and keep the vegetables the same.
Tip: Don’t overcook the zucchini—keeping it slightly crisp gives the skillet a much better texture.
