Servings
1 large sub
Ingredients
For the turkey meatballs
- 200–250 g lean ground turkey
- 1 tbsp grated Parmesan
- 1 tbsp beaten egg
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- Salt and black pepper, to taste
For the sub
- 1 low-carb hot dog bun or keto roll
- ½ cup no-added-sugar marinara sauce
- ¼ cup shredded part-skim mozzarella
- 1 tbsp grated Parmesan
- ½ tsp Italian seasoning
- 1 tsp olive oil, if needed for cooking
Instructions
- Make the meatballs. Mix ground turkey, Parmesan, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Shape into 5–6 small meatballs.
- Cook thoroughly. Place the meatballs in a lightly oiled skillet over medium heat. Turn occasionally and cook until browned and the centers reach 165°F (74°C), about 8–12 minutes depending on size.
- Add the sauce. Pour in the marinara sauce and simmer for 2–3 minutes, coating the meatballs evenly.
- Fill the bun. Place the meatballs inside the low-carb bun and spoon the sauce over them.
- Add cheese. Sprinkle mozzarella and Parmesan over the top.
- Bake. Place in a preheated oven at 400°F (200°C) for 5–7 minutes, until the cheese is melted and bubbly.
- Serve. Add a little extra Italian seasoning and serve hot with a green salad or roasted zucchini instead of potato wedges to keep carbs lower.
