Ingredients
For the pancakes
- 1 cup (112 g) almond flour
- 1 cup (225 g) low-fat cottage cheese
- 3 large eggs
- 2 tablespoons unsweetened almond milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1–2 tablespoons powdered erythritol or monk fruit sweetener
- ½ teaspoon ground cinnamon
- Pinch of salt
- Butter or cooking spray for the pan
For the cinnamon swirl
- 2 tablespoons softened butter
- 1 tablespoon brown sugar substitute
- 1 teaspoon ground cinnamon
- 1 teaspoon almond flour
Optional topping
- ¼ cup plain nonfat Greek yogurt
- A pinch of cinnamon
- Sugar-free maple syrup, to taste
Instructions
Step 1: Make the pancake batter
- Add the cottage cheese, eggs, almond milk, and vanilla extract to a blender. Blend until smooth.
- Transfer to a mixing bowl and add the almond flour, baking powder, sweetener, cinnamon, and salt.
- Stir until you have a thick but pourable batter. Let it rest for 3–5 minutes to thicken.
Step 2: Prepare the cinnamon swirl
- Mix the softened butter, brown sugar substitute, cinnamon, and almond flour in a small bowl.
- Stir until a thick paste forms.
- Transfer the mixture into a small piping bag or a zip-top bag with a tiny corner cut off.
Step 3: Cook the pancakes
- Heat a nonstick skillet over medium-low heat and lightly grease it with butter.
- Pour approximately ¼ cup of batter into the pan for each pancake.
- Pipe a small spiral of cinnamon butter over the top of each pancake while the batter is still wet.
- Cook for 2–4 minutes, until the edges look set and bubbles begin to appear.
- Carefully flip and cook for another 2–3 minutes, until golden and cooked through.
- Repeat with the remaining batter, lightly greasing the pan as needed.
Step 4: Serve
- Stack the pancakes on a plate.
- Add a spoonful of Greek yogurt for extra protein.
- Finish with cinnamon and a drizzle of sugar-free syrup, if desired.

Tips for success
- Keep the heat low: Almond flour browns faster than regular flour.
- Make the swirl thick: The almond flour helps prevent the cinnamon filling from spreading too much.
- Flip gently: These pancakes are more delicate than traditional flour pancakes.
- Boost protein: Serve with extra nonfat Greek yogurt or a side of egg whites.
Are these good for weight loss? They can fit a low-carb, high-protein weight-loss plan. Protein helps with fullness, but calories still matter, so keep butter and toppings measured.
