Low-Carb · Keto-Friendly · High-Protein
These adorable turtle-shaped pizzas have a cheesy almond-flour crust, rich pizza sauce, melted mozzarella, and pepperoni shells. They’re a fun, keto-friendly dinner without traditional high-carb pizza dough.
Ingredients
For the keto pizza dough
- 1½ cups shredded mozzarella cheese
- ¾ cup almond flour
- 2 tbsp cream cheese
- 1 large egg
- 1 tsp baking powder
- ½ tsp Italian seasoning
- ¼ tsp garlic powder
For the toppings
- ¼ cup low-sugar pizza sauce
- ¾ cup shredded mozzarella cheese
- 20–24 pepperoni slices
- 4 black olives, sliced, for the eyes
- 1 tbsp grated Parmesan cheese (optional)
- A little olive oil for brushing
Instructions
1. Preheat the oven: Heat to 400°F (200°C). Line a baking sheet with parchment paper.
2. Melt the cheeses: Place the 1½ cups mozzarella and cream cheese in a microwave-safe bowl. Heat in 20–30 second intervals, stirring until melted and smooth.
3. Make the dough: Mix in the almond flour, egg, baking powder, Italian seasoning, and garlic powder. Knead carefully until a soft dough forms. If sticky, let it cool slightly before shaping.
4. Shape the turtles: Divide the dough into four portions. Shape each portion into an oval body, then use small pieces of dough for the head, four legs, and tail. Press the pieces together firmly.
5. Pre-bake: Bake the shaped crusts for 7–9 minutes, until lightly golden and set.
6. Add the pizza toppings: Spread a thin layer of low-sugar pizza sauce over each body. Sprinkle with mozzarella and arrange pepperoni slices on top to create a turtle-shell pattern.
7. Add the eyes: Place small olive slices on each turtle’s head. Sprinkle with Parmesan if desired.
8. Finish baking: Return to the oven for 5–8 minutes, until the cheese is melted and bubbly and the crust is golden.
9. Cool and serve: Allow the pizzas to rest for 3–5 minutes before serving.
