2-Minute Keto English Muffin

Soft, fluffy, slightly tangy, and full of classic English muffin nooks and crannies! This easy 2-minute keto English muffin is made with almond flour, coconut flour, egg, and butter. It toasts beautifully, holds its shape, and is perfect for breakfast sandwiches or a simple buttery snack.

Prep Time: 2 minutes
Cook Time: 90 seconds–2 minutes
Total Time: 4 minutes
Servings: 1 muffin

Ingredients

  • 3 tbsp superfine almond flour
  • 1 tbsp coconut flour
  • ½ tsp baking powder
  • Pinch of salt
  • 1 large egg
  • 1 tbsp melted butter or coconut oil
  • 1 tbsp unsweetened almond milk or heavy cream

Optional Toppings:

  • Butter
  • Sugar-free strawberry jam
  • Cream cheese
  • Fried egg
  • Cheddar cheese
  • Avocado slices

Instructions

1. Prepare Your Mug

Choose a microwave-safe ramekin or small round mug. Lightly grease it with butter or cooking spray to prevent sticking.

2. Mix the Dry Ingredients

In a small mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well to remove any lumps.

3. Add the Wet Ingredients

Add the egg, melted butter, and unsweetened almond milk. Whisk until everything is combined into a smooth, thick batter.

Make sure there are no dry flour pockets at the bottom.

4. Fill the Ramekin

Pour the batter into your prepared ramekin. Smooth the top gently with a spoon.

Leave a little room at the top because the muffin will rise while cooking.

5. Microwave

Microwave on high for 90 seconds. Check the center. If it is still wet, continue cooking in 10–15-second intervals until fully set.

Cooking time may vary depending on your microwave.

6. Cool and Remove

Allow the muffin to cool for 1–2 minutes. Run a knife around the edges and carefully remove it from the ramekin.

7. Slice in Half

Use a sharp knife to cut the muffin horizontally into two equal halves.

You’ll see a soft, fluffy inside with little air pockets.

8. Toast Until Golden

Place both halves in a toaster, toaster oven, or dry skillet. Toast until golden brown and crispy on the edges.

9. Add Your Favorite Toppings

Spread with butter, cream cheese, or sugar-free jam. For a filling breakfast, add a fried egg and cheddar cheese to make a delicious keto breakfast sandwich.
