Keto Strawberry Cheesecake Quesadillas 🍓🧀

Low-Carb, High-Protein & Sugar-Free Dessert

Enjoy all the delicious flavors of strawberry cheesecake in a crispy, golden quesadilla! This keto-friendly version uses low-carb tortillas, creamy cottage cheese, and fresh strawberries for a sweet dessert without the extra sugar.

Prep Time: 10 minutes
Cook Time: 6–8 minutes
Total Time: 18 minutes
Servings: 2

Ingredients

For the Cheesecake Filling

  • ½ cup full-fat cream cheese, softened
  • ¼ cup plain nonfat Greek yogurt
  • 2 tablespoons powdered monk fruit or erythritol
  • ½ teaspoon vanilla extract
  • ¼ teaspoon lemon zest (optional)

For the Strawberry Filling

  • ⅓ cup fresh strawberries, finely diced
  • 1 teaspoon chia seeds (optional)
  • ½ teaspoon lemon juice

For the Quesadillas

  • 2 medium keto-friendly low-carb tortillas
  • 1 teaspoon butter for cooking
  • 1 tablespoon powdered keto sweetener for dusting

Instructions

1. Prepare the strawberries

  • Wash and finely dice the strawberries.
  • Pat them dry with paper towels.
  • Mix with lemon juice and chia seeds.
  • Set aside for 5 minutes.

2. Make the cheesecake filling

  • Beat softened cream cheese until smooth.
  • Add Greek yogurt, powdered sweetener, vanilla extract, and lemon zest.
  • Mix until creamy and fluffy.

3. Assemble the quesadillas

  • Lay one low-carb tortilla flat.
  • Spread half of the cheesecake mixture over one half.
  • Add half of the diced strawberries.
  • Fold the tortilla in half.
  • Repeat with the second tortilla.

4. Cook until golden

  • Heat a nonstick skillet over medium-low heat.
  • Add a little butter.
  • Place the folded quesadillas in the skillet.
  • Cook for 2–3 minutes per side until golden and crispy.
  • Avoid high heat so the filling warms without burning the tortillas.

5. Slice and serve

  • Remove from the skillet and let rest for 2 minutes.
  • Cut each quesadilla into 3 triangles.
  • Sprinkle with powdered keto sweetener.
  • Serve warm and enjoy!

Weight-Loss Tips

  • Use reduced-fat cream cheese to lower calories.
  • Choose high-protein, low-carb tortillas.
  • Keep strawberries measured because they contain natural sugars.
  • Use a calorie-free sweetener instead of sugar.
  • Avoid adding honey, jam, or regular powdered sugar.

Extra protein tip: Add 2 tablespoons of blended cottage cheese to the cheesecake filling for more protein and a creamy texture.

Result: Crispy outside, creamy cheesecake inside, juicy strawberries in every bite! 🍓
