Ingredients:

For the Cajun Seasoning:

  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper (adjust to taste for spice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Pasta:

  • 8 ounces fettuccine or penne pasta
  • 2 boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons Cajun seasoning (adjust for taste)
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup diced tomatoes (canned or fresh)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a small bowl, combine all the ingredients for the Cajun seasoning and set it aside.
  2. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  3. Season the chicken strips with the Cajun seasoning, ensuring they are well coated.
  4. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until it’s no longer pink and has a nice sear on the outside, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add a little more olive oil if needed, and then add the sliced bell peppers, onions, and minced garlic. Sauté the vegetables until they’re tender, about 3-5 minutes.
  6. Return the cooked chicken to the skillet and add the heavy cream, chicken broth, and diced tomatoes. Stir everything together, and let it simmer for about 5-7 minutes, or until the sauce thickens slightly. Season with salt and pepper to taste.
  7. Add the cooked pasta to the skillet and toss it in the creamy Cajun sauce until everything is well combined.
  8. Garnish the dish with chopped fresh parsley and serve immediately.
