Chicken and Dressing Casserole
Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste

For the Dressing:
- 4 cups cauliflower rice (you can buy this pre-riced or make your own)
- 2 tablespoons butter
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 1 teaspoon poultry seasoning
- 1/2 teaspoon dried sage
- Salt and pepper to taste

Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. Add the chicken breasts and cook until they are browned on both sides and cooked through. This should take about 5-6 minutes per side, depending on the thickness of the chicken breasts. Once done, remove them from the skillet and let them rest for a few minutes before slicing them into bite-sized pieces.
- In the same skillet, add the butter, onions, and celery. Sauté them until they become soft and translucent.
- Add the cauliflower rice to the skillet and cook for about 5-7 minutes, or until it’s tender and any excess moisture has evaporated. Make sure to stir occasionally.
- Stir in the almond flour, Parmesan cheese, poultry seasoning, dried sage, and salt and pepper. Mix until everything is well combined.
- Pour in the chicken broth and continue to cook for a few more minutes. The mixture should thicken slightly.
- In a greased 9×13 inch casserole dish, spread half of the cauliflower dressing mixture evenly on the bottom.
- Place the sliced chicken on top of the dressing.
- Spoon the remaining dressing mixture over the chicken.
- Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and the casserole is heated through.
- Once done, allow it to cool for a few minutes before serving.
