Chicken and Dressing Casserole

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Dressing:

  • 4 cups cauliflower rice (you can buy this pre-riced or make your own)
  • 2 tablespoons butter
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon dried sage
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat the olive oil in a skillet over medium-high heat. Add the chicken breasts and cook until they are browned on both sides and cooked through. This should take about 5-6 minutes per side, depending on the thickness of the chicken breasts. Once done, remove them from the skillet and let them rest for a few minutes before slicing them into bite-sized pieces.
  4. In the same skillet, add the butter, onions, and celery. Sauté them until they become soft and translucent.
  5. Add the cauliflower rice to the skillet and cook for about 5-7 minutes, or until it’s tender and any excess moisture has evaporated. Make sure to stir occasionally.
  6. Stir in the almond flour, Parmesan cheese, poultry seasoning, dried sage, and salt and pepper. Mix until everything is well combined.
  7. Pour in the chicken broth and continue to cook for a few more minutes. The mixture should thicken slightly.
  8. In a greased 9×13 inch casserole dish, spread half of the cauliflower dressing mixture evenly on the bottom.
  9. Place the sliced chicken on top of the dressing.
  10. Spoon the remaining dressing mixture over the chicken.
  11. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and the casserole is heated through.
  12. Once done, allow it to cool for a few minutes before serving.
