Ingredients:
- 2 cups cooked chicken breast, shredded or diced
- 2 tablespoons olive oil
- 1 red bell pepper, thinly sliced

Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced bell peppers and onions, and sauté until they become tender and slightly caramelized, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant. Season with salt and pepper to taste.
- Stir in the cooked chicken and fajita seasoning mix into the skillet, making sure the chicken and vegetables are well coated with the seasoning.

- After 20 minutes, remove the foil and continue baking for an additional 10 minutes or until the cheese is melted and bubbly.
- Once the casserole is done, remove it from the oven and let it cool slightly. Sprinkle chopped fresh cilantro over the top (optional) for a burst of flavor.
