Creamy Chicken Fajita Casserole Recipe:

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 packet of fajita seasoning mix
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced bell peppers and onions, and sauté until they become tender and slightly caramelized, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant. Season with salt and pepper to taste.
  3. Stir in the cooked chicken and fajita seasoning mix into the skillet, making sure the chicken and vegetables are well coated with the seasoning.
  4. In a separate bowl, combine the sour cream, shredded cheddar cheese, and shredded mozzarella cheese. Mix until well combined.
  5. Spread half of the chicken and vegetable mixture evenly on the bottom of the prepared baking dish.
  6. Spoon half of the creamy cheese mixture over the chicken and spread it out evenly.
  7. Repeat the layers with the remaining chicken and vegetable mixture and creamy cheese mixture.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. After 20 minutes, remove the foil and continue baking for an additional 10 minutes or until the cheese is melted and bubbly.
  10. Once the casserole is done, remove it from the oven and let it cool slightly. Sprinkle chopped fresh cilantro over the top (optional) for a burst of flavor.
