Keto Enchilada Casserole

Ingredients:

  • 1 ½ lbs ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) keto-friendly enchilada sauce (look for low-carb options)
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded lettuce (for garnish)
  • 1/2 cup diced tomatoes (for garnish)
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Sour cream (optional, for serving)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Add the chopped onion and garlic, and cook until the onion is softened.
  3. Drain any excess fat from the skillet, and then add the enchilada sauce, diced green chilies, ground cumin, chili powder, dried oregano, salt, and pepper. Mix well and let it simmer for a few minutes to allow the flavors to meld.
  4. In a greased casserole dish, spread half of the meat mixture evenly across the bottom.
  5. Sprinkle half of the shredded cheese over the meat mixture.
  6. Repeat with another layer using the remaining meat mixture and shredded cheese.
  7. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes.
  9. Garnish with shredded lettuce, diced tomatoes, and chopped cilantro.
  10. Serve with a dollop of sour cream if desired.
