Ingredients: For the pastry:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup psyllium husk powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup butter, melted

For the filling:
- 1 pound ground sausage (choose a low-carb option)
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup shredded mozzarella cheese (optional)

Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well.
- Add the melted butter and eggs to the dry ingredients and stir until a dough forms. Let it rest for a few minutes, as the psyllium husk will absorb some moisture and make the dough easier to work with.
- In a skillet, sauté the ground sausage, onion, bell pepper, and garlic over medium heat until the sausage is cooked and the vegetables are tender. Drain any excess liquid from the pan.
- Season the sausage mixture with oregano, salt, and pepper to taste. Mix in the shredded mozzarella cheese if you choose to use it.
- Divide the pastry dough into two equal portions. Place one portion between two sheets of parchment paper and roll it out into a rectangular shape, about 1/8 inch thick.
- Spread half of the sausage mixture over the rolled-out pastry dough.
- Carefully lift one side of the parchment paper to fold the dough over the sausage mixture. Gently peel the parchment paper back.
- Roll up the sausage roll, making sure to seal the edges well. You can use the parchment paper to help with this process.
- Repeat the process with the second portion of dough and the remaining sausage mixture.
- Place both sausage rolls on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
- Remove the sausage rolls from the oven and let them cool slightly before slicing into individual servings.
