Ingredients: For the pastry:

  • 1 tsp baking powder

For the filling:

  • 1 pound ground sausage (choose a low-carb option)
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well.
  3. Add the melted butter and eggs to the dry ingredients and stir until a dough forms. Let it rest for a few minutes, as the psyllium husk will absorb some moisture and make the dough easier to work with.
  4. In a skillet, sauté the ground sausage, onion, bell pepper, and garlic over medium heat until the sausage is cooked and the vegetables are tender. Drain any excess liquid from the pan.
  5. Season the sausage mixture with oregano, salt, and pepper to taste. Mix in the shredded mozzarella cheese if you choose to use it.
  6. Divide the pastry dough into two equal portions. Place one portion between two sheets of parchment paper and roll it out into a rectangular shape, about 1/8 inch thick.
  7. Spread half of the sausage mixture over the rolled-out pastry dough.
  8. Carefully lift one side of the parchment paper to fold the dough over the sausage mixture. Gently peel the parchment paper back.
  9. Roll up the sausage roll, making sure to seal the edges well. You can use the parchment paper to help with this process.
  10. Repeat the process with the second portion of dough and the remaining sausage mixture.
  11. Place both sausage rolls on a baking sheet lined with parchment paper.
  12. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  13. Remove the sausage rolls from the oven and let them cool slightly before slicing into individual servings.
