Keto Blueberry Cake Recipe
Ingredients:
- 3 large eggs (at room temperature)
- 1 teaspoon (4mL) vanilla extract
- 1/3 cup (65g) granulated Lakanto monk fruit sweetener (or any granulated sweetener of your choice)
- 1/3 cup (80g) melted unsalted butter
- 1/2 cup (125g) plain Greek yogurt or sour cream
- 2 cups (200g) blanched almond flour
- 2 teaspoons (8g) baking powder
- 1/4 teaspoon (1g) salt
- 1/2 cup (95g) fresh blueberries
- Zest of 1 lemon (optional)

Instructions:
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch (20×20 cm) baking dish or cake pan. You can also line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the 3 room-temperature eggs and 1 teaspoon of vanilla extract until well combined.
- Add 1/3 cup of granulated sweetener (such as Lakanto monk fruit) and mix until the sweetener is fully incorporated.
- Pour in 1/3 cup of melted unsalted butter and 1/2 cup of plain Greek yogurt (or sour cream). Mix everything until you have a smooth, consistent batter.
- In a separate bowl, combine the dry ingredients: 2 cups of blanched almond flour, 2 teaspoons of baking powder, and 1/4 teaspoon of salt. Stir well to ensure the baking powder and salt are evenly distributed.
- Gradually add the dry mixture to the wet mixture while stirring continuously. This will form a thick batter.
- Gently fold in 1/2 cup of fresh blueberries and the optional lemon zest. The lemon zest will add a lovely citrusy aroma to your cake.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for approximately 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
