Keto Blueberry Cake Recipe

 

Ingredients:

  • 3 large eggs (at room temperature)
  • 1 teaspoon (4mL) vanilla extract
  • 1/3 cup (65g) granulated Lakanto monk fruit sweetener (or any granulated sweetener of your choice)
  • 1/3 cup (80g) melted unsalted butter
  • 1/2 cup (125g) plain Greek yogurt or sour cream
  • 2 cups (200g) blanched almond flour
  • 2 teaspoons (8g) baking powder
  • 1/4 teaspoon (1g) salt
  • 1/2 cup (95g) fresh blueberries
  • Zest of 1 lemon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch (20×20 cm) baking dish or cake pan. You can also line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the 3 room-temperature eggs and 1 teaspoon of vanilla extract until well combined.
  3. Add 1/3 cup of granulated sweetener (such as Lakanto monk fruit) and mix until the sweetener is fully incorporated.
  4. Pour in 1/3 cup of melted unsalted butter and 1/2 cup of plain Greek yogurt (or sour cream). Mix everything until you have a smooth, consistent batter.
  5. In a separate bowl, combine the dry ingredients: 2 cups of blanched almond flour, 2 teaspoons of baking powder, and 1/4 teaspoon of salt. Stir well to ensure the baking powder and salt are evenly distributed.
  6. Gradually add the dry mixture to the wet mixture while stirring continuously. This will form a thick batter.
  7. Gently fold in 1/2 cup of fresh blueberries and the optional lemon zest. The lemon zest will add a lovely citrusy aroma to your cake.
  8. Pour the batter into the prepared baking dish and spread it evenly.
  9. Bake in the preheated oven for approximately 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  10. Once the cake is done, remove it from the oven and allow it to cool in the pan for about 10-15 minutes. Afterward, you can transfer it to a wire rack to cool completely.
