Ingredients:

  • 1/2 bag of fresh spinach leaves
  • 3 pieces of pan-fried bacon
  • 2 hard-boiled eggs, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons bacon grease (reserved from frying the bacon)
  • 1 to 2 tablespoons sweetener (e.g., monkfruit, to taste)
  • Salt and pepper to taste

Instructions:

  1. Start by frying the bacon:
    • In a skillet or frying pan, cook the bacon over medium heat until it becomes crispy and the fat has rendered. This should take about 5-7 minutes.
    • Once the bacon is cooked, remove it from the pan and place it on a paper towel-lined plate to drain. Reserve the bacon grease for the dressing.
  2. Prepare the salad:
    • While the bacon is cooking, you can prepare the other salad ingredients. Wash and dry the spinach leaves, then place them in a large salad bowl.
