Keto Burrito
This keto burrito is a satisfying and delicious low-carb meal that you can enjoy for lunch or dinner. It uses melted cheese as a wrap instead of a regular tortilla, which makes it extra cheesy and keto-friendly. You can fill it with your favorite ingredients, such as ground beef, lettuce, tomato, salsa, sour cream, and guacamole. It’s easy to make and perfect for meal prep.

Ingredients

  • 2 cups of shredded cheese (mozzarella and cheddar cheese)
  • 1/2 pound of ground beef
  • 1/4 cup of salsa
  • 2 tablespoons of sour cream
  • 2 tablespoons of guacamole
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of oregano
  • 1/4 teaspoon of chili powder
  • 2 cups of shredded lettuce
  • 1/4 cup of diced tomato
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a medium skillet over medium-high heat, cook the ground beef, breaking it up with a spatula, until browned and cooked through. Drain the excess fat if needed.
  2. Add the salsa, salt, pepper, garlic powder, cumin, paprika, oregano, and chili powder to the beef and stir well. Simmer for about 10 minutes until the sauce is slightly thickened.
  3. In a small nonstick skillet over low-medium heat, sprinkle 1/2 cup of cheese evenly and cook until melted and bubbly. Carefully flip the cheese over with a spatula and cook for another minute until golden on both sides.
  4. Transfer the cheese wrap to a plate and let it cool slightly. Repeat with the remaining cheese to make three more wraps.

  6. To assemble the burritos, place one cheese wrap on a large piece of aluminum foil. Spoon about 1/4 of the beef mixture on one end of the wrap. Top with 1/2 cup of lettuce, 1 tablespoon of sour cream, 1 tablespoon of guacamole, and 1 tablespoon of tomato. Fold the sides of the wrap over the filling and roll it up tightly. Wrap the foil around the burrito to secure it.
  7. Repeat with the remaining ingredients to make three more burritos.
  8. Enjoy your keto burritos hot or cold, or store them in the refrigerator for up to three days. You can also freeze them for up to three months and reheat them in the oven or microwave when ready to eat.
  9. Sprinkle some chopped cilantro over your burritos for extra flavor if you like.
