Keto Chocolate Almond Fat Bombs

Ingredients:

  • 1/2 cup coconut oil
  • 1 cup almond butter
  • 1/2 cup cacao powder
  • 1/4 cup MCT oil
  • 20 drops monk fruit sweetener (adjust to taste)
  • Dash of Himalayan salt

Instructions:

  1. Prepare a double boiler or a heatproof bowl placed over a pot of simmering water.
  2. Add coconut oil, almond butter, and MCT oil to the double boiler or heatproof bowl.
  3. Heat the mixture over low heat, stirring occasionally, until all ingredients are completely melted and well combined.
  4. Once melted, remove the mixture from heat and let it cool slightly.
  5. While the mixture is cooling, prepare your dry ingredients. In a separate bowl, sift together the cacao powder and Himalayan salt.
  6. Once the wet mixture has cooled slightly but is still liquid, add the monk fruit sweetener to it. Stir well to ensure it’s evenly distributed.
  7. Gradually add the dry ingredients (cacao powder and salt) to the wet mixture, whisking continuously until everything is well blended and smooth.
  8. Line a mini cupcake pan with mini cupcake wrappers.
  9. Pour the mixture evenly into the mini cupcake wrappers, filling each one about 3/4 full.
  10. Transfer the filled cupcake pan to the freezer and let the fat bombs set for at least 1-2 hours, or until firm.
  11. Once the fat bombs are completely set, remove them from the freezer and transfer them to an airtight container.
  12. Store the fat bombs in the freezer until ready to serve. They can be kept in the freezer for several weeks.
