Keto Chocolate Chip Muffins
These muffins make a delicious and satisfying keto-friendly treat!
Ingredients:
- 2 cups almond flour
- 1/3 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated Erythritol or your preferred keto-friendly sweetener
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk
- 1/2 cup sugar-free chocolate chips

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare Muffin Pans:
- Line a muffin tin with paper liners or grease each cup with a little butter or cooking spray.
- Mix Dry Ingredients:
- In a large mixing bowl, whisk together the almond flour, coconut flour, cocoa powder, Erythritol, baking powder, baking soda, and salt until well combined.
- Combine Wet Ingredients:
- In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and almond milk.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Fold in Chocolate Chips:
- Gently fold in the sugar-free chocolate chips into the batter.
- Fill Muffin Cups:
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake:
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs (avoid overbaking).
- Cool:
- Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
