Ham, Egg, and Cheese Cups

- Slices of ham (enough to line the muffin cups)
- Shredded cheddar cheese
- Salt and pepper, to taste
- Avocado oil spray (or any non-stick cooking spray)
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Muffin Pan:
- Spray a muffin pan with non-stick cooking spray. Avocado oil spray is a good choice.
- Line Muffin Cups with Ham:
- Take slices of ham and line each muffin cup with them. Ensure that the ham covers the bottom and sides of each cup, creating a “cup” shape.
- Add Shredded Cheddar Cheese:
- Sprinkle a bit of shredded cheddar cheese into the bottom of each ham-lined cup. The amount can vary based on your preference, but a tablespoon per cup is a good starting point.
- Crack an Egg into Each Cup:
- Crack one egg into each ham and cheese-lined cup. Be careful not to break the yolk if you prefer a runny yolk. If you prefer a fully cooked yolk, you can gently break the yolk with a fork and mix it slightly.
- Season with Salt and Pepper:
- Sprinkle each egg with a pinch of salt and pepper, according to your taste preferences.
- Place the muffin pan in the preheated oven and bake for about 15 minutes, or until the egg whites are set, and the yolks are cooked to your liking. Keep an eye on them, as cooking times may vary slightly depending on your oven.
- Once done, remove the muffin pan from the oven. Let the cups cool for a few minutes before carefully removing them from the pan.

- Garnish with fresh herbs like chives or parsley if desired.
