Keto Chocolate Chip Muffins

These muffins make a delicious and satisfying keto-friendly treat!

Ingredients:

  • 2 cups almond flour
  • 1/3 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated Erythritol or your preferred keto-friendly sweetener
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/2 cup sugar-free chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare Muffin Pans:
    • Line a muffin tin with paper liners or grease each cup with a little butter or cooking spray.
  3. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the almond flour, coconut flour, cocoa powder, Erythritol, baking powder, baking soda, and salt until well combined.
  4. Combine Wet Ingredients:
    • In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and almond milk.
  5. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Fold in Chocolate Chips:
    • Gently fold in the sugar-free chocolate chips into the batter.
  7. Fill Muffin Cups:
    • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  8. Bake:
    • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs (avoid overbaking).
  9. Cool:
    • Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
