Ingredients:

  • 2 cups cooked and shredded chicken breast
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onions
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup enchilada sauce (sugar-free for a keto option)

For Assembly and Topping:

  • 1 cup shredded cheddar or Mexican blend cheese

Instructions:

1. Prepare the Cheese Tortillas:

  • Preheat your oven to 375°F (190°C).
  • In a microwave-safe bowl, combine mozzarella, Parmesan, and cream cheese. Microwave in 30-second intervals, stirring each time, until the cheeses are melted and well combined.
  • Let the cheese mixture cool slightly, then add the egg and chili powder. Mix until you have a smooth dough-like consistency.
  • Divide the dough into 6 portions and press each portion into a thin, round shape on a parchment paper-lined baking sheet.
