Ingredients:
For the Cheese Shell:
- 2 cups shredded cheddar or Mexican blend cheese
For the Filling:
- 1 pound ground beef or turkey

- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onions
- 1/4 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (optional)

For the Low-Carb Tortillas:
- 4 low-carb tortillas (store-bought or homemade)
For Toasting:
- 4 tablespoons unsalted butter
For Mild Sauce (Optional):
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder

Instructions:
1. Prepare the Cheese Shells:
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Sprinkle shredded cheese in 6-inch circles on the parchment paper, leaving space between each.
- Bake for 8-10 minutes until the cheese is melted and edges are golden.
