Ingredients:

For the Cheese Shell:

  • 2 cups shredded cheddar or Mexican blend cheese

For the Filling:

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning (check for low-carb options or make your own)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (optional)

For the Low-Carb Tortillas:

  • 4 low-carb tortillas (store-bought or homemade)

For Toasting:

  • 4 tablespoons unsalted butter

For Mild Sauce (Optional):

  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

1. Prepare the Cheese Shells:

  • Preheat the oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Sprinkle shredded cheese in 6-inch circles on the parchment paper, leaving space between each.
  • Bake for 8-10 minutes until the cheese is melted and edges are golden.
  • Allow the cheese to cool for a few minutes until it firms up but is still pliable.

2. Cook the Filling:

  • In a skillet over medium heat, cook the ground beef or turkey until browned.
  • Drain excess fat and add the taco seasoning according to package instructions.
  • Simmer until the mixture thickens.

3. Assemble the Crunchwraps:

  • In a separate pan, melt a tablespoon of butter over medium heat.
  • Place a low-carb tortilla in the pan, followed by a cheese shell, then add a portion of the cooked meat.
  • Top with lettuce, tomatoes, shredded cheese, onions, olives, and cilantro.
  • Place another cheese shell on top and fold the edges of the tortilla over the filling, creating a hexagonal shape.
  • Toast each side until golden brown and the cheese is crispy.

4. Make the Mild Sauce (Optional):

  • In a bowl, whisk together mayonnaise, sour cream, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper until well combined.
