Ingredients:

  • 1 cup almond flour
  • 3 tbsp unsweetened bakers chocolate, melted
  • 3 tbsp Kerrygold butter
  • 3 tbsp unsweetened cocoa powder
  • 4 eggs
  • 1/3 cup powdered sweetener (such as Swerve)
  • 4 tbsp heavy cream
  • 1 tsp baking powder
  • 1 tsp vanilla extract

For the Glaze:

  • 2 oz unsweetened chocolate
  • 2 tsp powdered sweetener (such as Swerve)
  • 1 tbsp coconut oil

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your donut pan(s) with butter or cooking spray.
  2. In a bowl or food processor, blend together the very soft butter, heavy cream, and powdered sweetener until smooth. You can also use a stand mixer for this step.
  3. Add the eggs and vanilla extract to the mixture and continue mixing until well combined.
  4. Next, add the melted unsweetened chocolate, cocoa powder, almond flour, and baking powder to the mixture. Blend everything together until you have a smooth batter.
  5. Spoon the batter into the greased donut pans, making sure not to overfill and to maintain the hole in the center of each donut.
  6. Bake the donuts in the preheated oven for 13-15 minutes, or until they are fully cooked through. You can insert a toothpick into the center of a donut – if it comes out clean, they’re done.
