Ingredients:
- 2 cups unsweetened almond milk or coconut milk (full-fat for creamier custard)
- 4 large egg yolks
- 1/3 cup powdered erythritol or stevia (adjust to taste)
- 2 tbsp unsalted butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp xanthan gum (optional, for thickening)
- A pinch of salt

- In a saucepan, combine the almond or coconut milk and sweetener. Heat over medium-low heat, stirring until the sweetener has dissolved.
- In a separate bowl, whisk the egg yolks until they become pale and slightly thickened.
- Slowly pour a little of the heated milk mixture into the egg yolks while whisking constantly. This is to temper the eggs and prevent them from curdling.
- Gradually add the tempered egg mixture back into the saucepan with the remaining milk mixture, stirring constantly.
- Continue to cook the mixture over low heat, stirring continuously until it thickens. This can take about 10-15 minutes. If you’d like it even thicker, you can add 1 tsp of xanthan gum at this point and continue to whisk.
- Once the custard has thickened, remove it from heat. Stir in the butter (or coconut oil), vanilla extract, and a pinch of salt.
- Let the custard cool to room temperature. As it cools, it will continue to thicken.
- Once the custard has cooled, you can serve it as is or use it as a filling for keto-friendly pastries or desserts.
