Ingredients:

  • 2 cups unsweetened almond milk or coconut milk (full-fat for creamier custard)
  • 4 large egg yolks
  • 1/3 cup powdered erythritol or stevia (adjust to taste)
  • 2 tbsp unsalted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp xanthan gum (optional, for thickening)
  • A pinch of salt

  1. In a saucepan, combine the almond or coconut milk and sweetener. Heat over medium-low heat, stirring until the sweetener has dissolved.
  2. In a separate bowl, whisk the egg yolks until they become pale and slightly thickened.
  3. Slowly pour a little of the heated milk mixture into the egg yolks while whisking constantly. This is to temper the eggs and prevent them from curdling.
  4. Gradually add the tempered egg mixture back into the saucepan with the remaining milk mixture, stirring constantly.
  5. Continue to cook the mixture over low heat, stirring continuously until it thickens. This can take about 10-15 minutes. If you’d like it even thicker, you can add 1 tsp of xanthan gum at this point and continue to whisk.
  6. Once the custard has thickened, remove it from heat. Stir in the butter (or coconut oil), vanilla extract, and a pinch of salt.
  7. Let the custard cool to room temperature. As it cools, it will continue to thicken.
  8. Once the custard has cooled, you can serve it as is or use it as a filling for keto-friendly pastries or desserts.
