Keto Egg Roll in a Bowl
This is my own take on the classic Egg Roll in a Bowl. Another staple in our house, as it is for many! I really love this because you get a totally different texture and flavour out of the pork loin as you do from the ground pork in the original recipe. I hope you like it! 🙂
Note: the net carbs are a little high in this dish. You can omit the shiitake to bring the carbs down, since they are a bit higher in carbs than other mushrooms and veggies. But I do love them! Another option is to slice 1/2 an avocado and mix in after serving, which I do quite often as well! This will give you more fat, less net carbs. 🙂

Ingredients

4 tbsp olive oil

1 small onion

1 lb pork loin, sliced into thin bite sized pieces

1/2 tsp chili flakes

1/4 tsp garlic powder

Salt and pepper to taste

1/4 cup tamari sauce or soy sauce

150 g shiitake mushrooms

1 bag (or 250 g) broccoli slaw or cabbage

optional: sesame seeds, scallions for topping

Saute onion in olive oil until translucent.

Add pork to pan and saute for a minute. Add chili flakes, garlic powder, salt and pepper to pork and saute until cooked through, about 6-8 minutes.

Add tamari or soy sauce, mix well with pork and simmer for a minute.

Add mushrooms and broccoli slaw (or cabbage) to the pan and cook until veggies are soft.

Serve with whatever toppings you like!
