  • 2 cups almond flour
  • 2 large eggs
  • 2 cups shredded mozzarella cheese

  • Filling of your choice (e.g., cooked sausage, pepperoni, cooked bacon, sautéed vegetables)


  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheese is melted and well combined.
  3. In another bowl, whisk together the almond flour, eggs, and baking powder.
  4. Combine the melted cheese mixture with the almond flour mixture. Knead until a dough forms.
  5. Divide the dough into equal portions and roll each portion into a ball.
  6. Flatten each dough ball into a thin circle on a piece of parchment paper.
  7. Add your desired filling to one half of each dough circle.
  8. Fold the other half of the dough over the filling to create a pocket. Press the edges firmly to seal.
  9. Transfer the hot pockets to a baking sheet lined with parchment paper.
