  • 1 1/2 cups almond flour
  • 1/4 cup powdered erythritol or your preferred sweetener
  • 1/4 cup melted butter
  • Pinch of salt

For the filling:

  • 3/4 cup powdered erythritol or your preferred sweetener
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • 4 large eggs
  • 1/4 cup heavy cream

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine the almond flour, powdered erythritol, melted butter, and a pinch of salt. Mix until well combined.
  3. Press the crust mixture evenly into the bottom of the prepared baking dish. Bake in the preheated oven for 12-15 minutes, or until lightly golden brown around the edges. Remove from the oven and set aside to cool slightly.
