Keto Meaty Cabbage Soup
Ingredients:
- 1 lb (450g) ground beef or ground pork
- 4 cups green cabbage, shredded
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth (preferably low-sodium)
- 1 can (14 oz) diced tomatoes (no sugar added)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the Ground Meat:
- In a large soup pot, heat the olive oil over medium heat. Add the ground beef or ground pork and cook until browned. Remove any excess fat if needed.
- Add Vegetables:
- Add the diced onion, carrots, celery, and minced garlic to the pot. Sauté for a few minutes until the vegetables start to soften.
- Add Cabbage:
- Stir in the shredded cabbage and continue to cook for another few minutes until the cabbage starts to wilt.
- Season and Add Liquids:
- Add the dried thyme, dried oregano, bay leaf, diced tomatoes (with their juice), and beef or vegetable broth to the pot. Stir well to combine.
- Simmer:
- Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
- Season and Serve:
- Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
- Ladle the soup into bowls, garnish with chopped fresh parsley, and serve hot.
