Keto Meaty Cabbage Soup


  • 1 lb (450g) ground beef or ground pork
  • 4 cups green cabbage, shredded
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef or vegetable broth (preferably low-sodium)
  • 1 can (14 oz) diced tomatoes (no sugar added)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)


  1. Cook the Ground Meat:
    • In a large soup pot, heat the olive oil over medium heat. Add the ground beef or ground pork and cook until browned. Remove any excess fat if needed.
  2. Add Vegetables:
    • Add the diced onion, carrots, celery, and minced garlic to the pot. Sauté for a few minutes until the vegetables start to soften.
  3. Add Cabbage:
    • Stir in the shredded cabbage and continue to cook for another few minutes until the cabbage starts to wilt.
  4. Season and Add Liquids:
    • Add the dried thyme, dried oregano, bay leaf, diced tomatoes (with their juice), and beef or vegetable broth to the pot. Stir well to combine.
  5. Simmer:
    • Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
  6. Season and Serve:
    • Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
    • Ladle the soup into bowls, garnish with chopped fresh parsley, and serve hot.
