Ingredients:

  • Two 5 oz tubes of High Key chocolate sandwich cookies (Keto-friendly), broken into pieces
  • Four 7 oz bags of Lily’s white chocolate chips (sugar-free)
  • A few drops of green food coloring
  • 1/2 teaspoon mint extract
  • A couple of shakes of salt

Instructions:

  1. Line a cookie sheet with wax paper and set aside.
  2. In a microwave-safe bowl, melt the Lily’s white chocolate chips in the microwave in 30-second intervals, stirring between each interval until smooth.
  3. Once melted, add a few drops of green food coloring and 1/2 teaspoon of mint extract to the melted white chocolate. Stir until well combined.
  4. Taste the mixture and if you find the white chocolate chips too sweet, add a couple of shakes of salt to balance the sweetness. Mix well.
