Keto Mozzarella and Pepperoni Chips

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 8-10 pepperoni slices
  • Parchment paper
  • Baking sheet

Instructions:

  1. Preheat your oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Baking Sheet: Line a baking sheet with parchment paper. This will help prevent the cheese from sticking to the baking sheet and make it easier to remove the chips later.
  3. Forming the Cheese Chips:
    • Take small mounds of shredded mozzarella (about 1 tablespoon each) and place them on the parchment paper, leaving enough space between them to allow for spreading during baking.
    • Flatten each mound of cheese into a thin, even layer to form your “chips.”
    • Place 1 or 2 pepperoni slices on top of each cheese mound, pressing them down gently into the cheese.
  4. Bake the Chips: Place the baking sheet in the preheated oven and bake for about 5 minutes, or until the edges of the cheese start to turn golden brown and crispy. Keep a close eye on them to prevent burning.
  5. Broil for Extra Crispiness: After the initial baking, switch your oven to the broil setting on high. Keep a very close eye on the chips as they broil; this should only take about 1-2 minutes. You want them to become golden and crispy but not burnt, so stay nearby during this step.
  6. Cool and Let Them Set: Once your chips have reached your desired level of crispiness, remove them from the oven. Carefully transfer them to a cooling rack or a plate lined with paper towels. Allow them to sit undisturbed for about 10 minutes; this will give them time to set and become even crunchier.
  7. Remove Excess Oil: Dab the chips with a napkin or paper towel to remove any excess oil that may have rendered from the pepperoni. This step can help make the chips less greasy.
