Ingredients:
For the Pumpkin Slices :
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
- 2 large eggs
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1 teaspoon vanilla extract

For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/2 cup powdered erythritol or your preferred keto-friendly powdered sweetener
- 1 teaspoon vanilla extract
Instructions:
For the Pumpkin Slices :
- Preheat your oven to 350°F (175°C). Grease or line a baking pan with parchment paper.
- In a bowl, whisk together almond flour, coconut flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a separate large bowl, cream together the softened butter and erythritol until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Then, mix in the pumpkin puree and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spread the batter evenly in the prepared baking pan.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely before frosting.

For the Cream Cheese Frosting:
- In a medium bowl, beat together the softened cream cheese and butter until smooth.

- Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top.
- Optionally, sprinkle a little extra cinnamon on top for garnish.
- Chill in the refrigerator for at least 1-2 hours to let the frosting set.
- Once chilled, cut into bars and serve.
