Keto Pumpkin Slices With Cream Cheese Frosting

Ingredients:

For the Pumpkin Slices :

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
  • 2 large eggs
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered erythritol or your preferred keto-friendly powdered sweetener
  • 1 teaspoon vanilla extract

Instructions:

For the Pumpkin Slices :

  1. Preheat your oven to 350°F (175°C). Grease or line a baking pan with parchment paper.
  2. In a bowl, whisk together almond flour, coconut flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a separate large bowl, cream together the softened butter and erythritol until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition. Then, mix in the pumpkin puree and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Spread the batter evenly in the prepared baking pan.
  7. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool completely before frosting.

For the Cream Cheese Frosting:

  1. In a medium bowl, beat together the softened cream cheese and butter until smooth.
  2. Add the powdered erythritol and vanilla extract, and beat until well combined and smooth.
  3. Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top.
  4. Optionally, sprinkle a little extra cinnamon on top for garnish.
  5. Chill in the refrigerator for at least 1-2 hours to let the frosting set.
  6. Once chilled, cut into bars and serve.
