I’ve been addicted to carbs for a very long time, but during the past several years, I’ve thrown off the yoke of tyranny and started eating a low carb, sugar-free diet. In a similar situation, my spouse joined me, and between the two of us, we had dropped almost 200 pounds. I teach high school English, read books and coffee at an alarming rate, care for a 3-year-old and a Great Dane when I’m not thinking up healthier, low-carb ways to still enjoy my favorite foods.

I firmly think that eating clean, healthy food should not be monotonous; whether you are a seasoned home cook or a microwave-only pro, there is still fun to be had in the kitchen.

KETO RICOTTA PANCAKES RECIPE

To make these simple keto pancakes, you only need 4 ingredients. If you like your pancakes a little bit sweeter, add these 2 extra ingredients.

INGREDIENTS

Ricotta cheese, whey protein powder, eggs, baking powder, and I used vanilla flavor, although unflavored is also acceptable. Ingredients that are optional: I like to include vanilla stevia and a touch of salt in these, but you may omit them if you like.

DIRECTIONS

Combine(blender) all the ingredients.

Coconut oil should be warmed in a skillet over medium-high heat.

Fourteen cups of batter should be used for each pancake.

You can use an English muffin mould to make pancakes by hand or on a skillet.

Cook for two to three minutes on one side, or until bubbles begin to form in the centre and along the edges. For 1-2 minutes, flip the food over and cook the other side.

POWDERS OF PROTEIN RECOMMENDED

I’ve been playing with protein powder a lot recently, using it in my Cloud Bread Loaf and rolls, grilled cheese sandwiches, and French toast.

Many low-carb recipes call for cream cheese, and I’ll admit that I don’t always enjoy it. That’s why I substituted sour cream in my Cloud Bread modification.

When I first tried an egg fast, I also tried my friend Melissa’s well-known Cream Cheese Pancakes. I wanted to eat a lot of them even though they were tasty and ideal if you can’t have protein powder because they didn’t full me up at all.

Jay Robb’s brand is my preferred protein powder because it doesn’t have a long list of unpronounceable chemicals. In these keto pancakes, I use the vanilla flavor.

THESE FLUFFLY KETO PANCAKES CAN I MAKE THEM?

These are not the kind of pancakes you want if you prefer thick, fluffy ones. For those, try the coconut flour pancakes in my cookbook.

But when you don’t want the usual eggs you’ve been eating, they are fantastic for a quick, light breakfast.

BEST SYRUPS WITHOUT SUGAR

The brown syrup you see on top is actually Sukrin Gold Fiber Syrup, a sugar-free syrup. The kids and I both adore it!

Liquid allulose makes a delicious syrup. Even though it is not as sweet or brown, it is still excellent.

Although not as thick as the Sukrin syrup, Lankanto’s sugar-free maple syrup is nonetheless wonderful.

Best keto ricotta pancake tips

These don’t have to be as big and flat as I did. If you prefer them precisely round and a little thicker, you might pour the batter into an English muffin ring mould. Lids from mason jars could potentially be used as moulds.

Since the protein powder contains sugar, you really don’t need any. However, as I and the kids prefer it to be sweeter, we use vanilla stevia; however, feel free to use a different amount of sweetener in its place by using my conversion chart.

If butter appeals to you more, you can fry pancakes in that instead of coconut oil.

If you don’t like sweet pancakes, you can simply omit the sweetener.

Although I haven’t tried it, you might be able to substitute some almond flour for the protein powder if you’re on a really low-carb diet or can’t use protein powder.

Oil used to fry pancakes is not included in the nutrition information.

Ingredients

  • 4 eggs
  • Ricotta cheese, half a cup (I used part skim)
  • 1/4 cup whey protein powder in vanilla The 1/2 teaspoon Jay Robb baking powder was used.
  • salt shaker optional frying with 1/2 teaspoon vanilla liquid stevia coconut oil

Instructions

  1. Combine all ingredients in a blender or by hand whisking.
  2. Warm( skillet) coconut oil over medium-high heat.
  3. For each pancake, measure out 14 cup of batter.
  4. You can make pancakes by hand or in a skillet using an English muffin mould.
  5. Cook for 2-3 minutes on one side, or until bubbles start to appear in the centre and along the edges. Turn over. Heat(1-2 minutes) second side. totals 8 pancakes; 2 pancakes each serving.
  6. Enjoy right away!
