Keto Shepherd’s Pie
Ingredients:
For the Meat Filling:
- 1 lb ground beef (or lamb for a traditional Shepherd’s Pie)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup green beans, cut into 1-inch pieces
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Cauliflower Mash Topping:
- 1 large head of cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Meat Filling:
- In a large skillet, heat olive oil over medium-high heat. Add chopped onions and garlic, sauté until fragrant and translucent.
- Add ground beef and cook until browned. If using lamb, cook until no longer pink.
- Stir in diced carrots and green beans. Cook for a few minutes until they start to soften.
- Add beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Stir well and let it simmer for 5-7 minutes until the sauce thickens. Adjust seasoning to taste.
- Cauliflower Mash Topping:
- In a separate pot, bring water to a boil. Add the cauliflower florets and cook until tender (about 6-8 minutes).
- Drain the cauliflower and return it to the pot. Add butter, heavy cream, shredded cheddar cheese, salt, and pepper.
- Using an immersion blender or a food processor, blend the cauliflower until it reaches a smooth and creamy mashed potato-like consistency.
- Assembling:
- Transfer the meat filling to a 9×13 inch (22×33 cm) baking dish, spreading it out evenly.
- Spoon the cauliflower mash over the meat filling, spreading it to cover the entire surface.
- Baking:
- Place the Shepherd’s Pie in the preheated oven and bake for 25-30 minutes, or until the top is golden and slightly bubbly.
