Keto Shepherd’s Pie

Ingredients:

For the Meat Filling:

  • 1 lb ground beef (or lamb for a traditional Shepherd’s Pie)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Cauliflower Mash Topping:

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Meat Filling:
    • In a large skillet, heat olive oil over medium-high heat. Add chopped onions and garlic, sauté until fragrant and translucent.
    • Add ground beef and cook until browned. If using lamb, cook until no longer pink.
    • Stir in diced carrots and green beans. Cook for a few minutes until they start to soften.
    • Add beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Stir well and let it simmer for 5-7 minutes until the sauce thickens. Adjust seasoning to taste.
  3. Cauliflower Mash Topping:
    • In a separate pot, bring water to a boil. Add the cauliflower florets and cook until tender (about 6-8 minutes).
    • Drain the cauliflower and return it to the pot. Add butter, heavy cream, shredded cheddar cheese, salt, and pepper.
    • Using an immersion blender or a food processor, blend the cauliflower until it reaches a smooth and creamy mashed potato-like consistency.
  4. Assembling:
    • Transfer the meat filling to a 9×13 inch (22×33 cm) baking dish, spreading it out evenly.
    • Spoon the cauliflower mash over the meat filling, spreading it to cover the entire surface.
  5. Baking:
    • Place the Shepherd’s Pie in the preheated oven and bake for 25-30 minutes, or until the top is golden and slightly bubbly.
